A little knowledge about Dark-green Matcha
What is Matcha?
Matcha refers to powdered tea that is ground using a stone mill. It originated in the Sui Dynasty in China, flourished during the Tang Dynasty, and reached its peak during the Song Dynasty. It has a history of over a thousand years. "Azure clouds are blown without cease, white foam floats and gathers in the bowl" are the words of praise for matcha by the Tang Dynasty poet, Lu Tong, describing the shape and color of matcha foam.
The raw material for matcha is tea leaves that are not rolled or twisted. The production process involves two key steps: shading and steaming. In the 20 days before spring tea leaves are harvested, a canopy is set up to cover them with reed screens and straw screens, achieving a light-shielding rate of over 98%.
How would you describe the aroma and taste of this tea? What are its unique characteristics compared to this product?
